Low Sugar Stevia Cookies - Perfect for Decorating!


Looking for the perfect low sugar cookie to decorate for a special occasion? Look no further! This recipe is both healthy and yummy, and comes out perfect once you get the flour ratio right. I did have to eyeball extra flour to make it the perfect consistency, so my recommendation is to go with your gut in terms of that. This recipe is adapted from Katrina's Kitchen (found on Pinterest) I've made this recipe twice and both times I've had to add extra flour. I didn't measure though, because I was doing it on the fly. You can tell when the cookies are the right consistency when the whole shape once cut and doesn't fall apart when you try to move it onto the pan. If it's not right, just keep kneading with extra flour until it is good.


Here are some great things about this recipe that Katrina cites on her blog: it is fast, no chilling is required, and the edges come out nice and crisp because the cookies don't expand much. Maybe someday I will have an exact measure for flour but until then, here is what I have for you for this recipe. What makes it healthy and yummy? Dough is made from 50% Almond flour and 100% truvia instead of sugar! I still used sugar in the icing though ;) (royal icing from Genius Kitchen) **decorating tips found below at the bottom of the recipe!**


♡Low Sugar Stevia Cookies♡

➺Ingredients

  • 1 cup unsalted butter (2 sticks) softened
  • 1/4 cup + 2 tbsp + 1 tsp Truvia 
  • 1 tsp vanilla extract
  • 1 egg
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups all-purpose flour
  • 1.5 cups almond flour

➺Directions

  1. Preheat oven to 350°F.
  2. Using mixer, cream together softened butter and Truvia until smooth.
  3. Beat in extracts and egg.
  4. In another bowl, combine dry ingredients and stir together until well mixed.
  5. Slowly add dry to wet ingredients, beating as you go, until fully combined (may need to knead by hand if dough becomes too stiff)
  6. Roll out dough onto surface about 1/4 inch thick and cut with cookie cutters.
  7. Bake for 6-10 minutes. Let cool on cookie sheet then transfer to cooling rack and wait until fully cooled before decorating. Voila! 


➺Tips for royal icing on cookies:

  • Using royal icing recipe from Genius Kitchen, mix 4-5 colors of icing using gel food coloring. 
  • Fill piping bags (or large zip lock bags) for each color and simply cut a small hole cut at end (no fancy tips needed)
  • To make a cool pattern on cookies (seen in pic above), line edges with white and flood with white icing. Then pipe straight horizontal lines with alternating colors while still wet.
  • Use toothpick, run through design perpendicular to how you created it, going up in one direction, then down in one direction on the next line, alternating to achieve this more refined look.
